I for one... use them for many things, it depends on the strategy you prefer. First you can use them to increase your resource's production by building much more mines (and their levels) - if you wanna get faster to the toplist players (of the Statistics menu)... it's an easy way, but a bit danger, because you have to be very careful and active, and you may have a lot of new enemies who just want all your resources 
. Second... to take up more space in the universe if you have good speed bonuses (researches) and keep your eye open for some forgotten (or not yet taken) good recycle fields near your colonies by your Recycle fields menu (if you're a BF General, it's a profitable way to play, too).
You can colonise near to enemies (smaller distance = less time to catch them) and attack them more effectively.
If you prefer the Noxis' race and your vocation is to be a ship trader, than you can increase much your production of ships (more planets = more Shipyards).

Tip: Don't even think about colonising your brand new colonies closer together! Or you'll take the risk to be "colonised" by the same guys (enemies) I was talking about 4-5 phrases earlier...
