how do I change the time zone, im in Eastern, I think my noon is like the standard 8pm....

There is no way that I know of. You just have to know the difference and calculate mentally. I am on PST (Pacific Standard Time), and the game time is 10 hours ahead. So, when it is midnight my time, it is 10:00 am in the game. For you, I guess that would be 7 hours ahead.
