As you understood from posts above, you can not specify what resource to steal.You take half (50 %) of the resource which is on the planet.If you do not have enough ships , as in your case, the first resource that you will take from is the metal.
Example: You attack with 4 Cargoships and there is 50 000 metal and 50 000 crystal on the planet, Your capacity of the ships is 20 000, so you take 20 000 metal.If you attack the same planet with 10 Cargoships you will take everything possible (25 000 metal and 25 000 crystal).
